Erie Canal Peach Jam

The recipe for this jam was popular amongst the farm wives around the time of the Civil War. My great grandmother, a farm wife herself, used to make and sell a summer's supply of these and other fruit and vegetable items she would "put-up" to the packet boat cooks and to the canal-side stores. These recipes are unchanged and are as good today as they were those many years ago. Many friends and family members have asked me for years to make them available so they could buy them whenever they ran out. Now I've done just that. I hope your family will enjoy them as much as we have.
