Four generations ago my great, great grandmother, a farm wife, made everything from scratch. She put up her own preserves, jams, jellies, tomatoes and vegetables. This Chili Sauce was created by on the family farm in Warners, NY around the time of the Civil War. The recipe has been passed down from mother to daughter for generations. It's one of many lasting family traditions.

My great, great grandmother grew almost all of her own spices. The farm provided her with beef, chicken, pork, eggs and bacon.  Her workdays were long and hard. There were no modern machines and no shortcuts as we know them today. Everything on the farm was a chore, a true labor for every member of the family.

As family lore tells the story, this is the same recipe that was used to make the chili sauce that was served to passengers aboard the packet boat "Austin Gibbons" as it sailed the Erie Canal. I am thankful that she took the few minutes to jot down the recipe to this chili sauce and pass it along to her daughter, my grandmother, who in turn passed it down to my mother and on to my sister Alice who still makes just enough for our family today.

With all of the requests from friends and neighbors and cousins and other relatives, I thought it was time to share this delicious topper for hamburgers, pork chops, meat-loaf, chicken and even as a dip for tortillas with everyone.

Our chili Sauce has no garlic or hot spices. It is mild and delicious and pleasing to your pallet. Even the kids will like it as we did when we were growing up. It's one of my favorite things in life. I hope you'll like it as much as we all do.
